Menu planning my anti-sway

Soooo I am creating a weekly meal plan board...
I figure if I come up with a weekly guide and do weekly shopping
 it will help keep us from swaying...
Sounds like a plan.
I started googling and looking and comparing 
then I decided what I liked from each of the ones I seen 
and figured out how I wanted it from there. 
I know how I want it.
 I can see it in my head. 
Lets hope I can recreate it.
 I see a shopping trip in my future... :0)
I'm going to hit the dollar deals store. That way I can keep it reasonable. 
I can definitely see me going overboard lol...

Okay I'm back from dollar deals, time to put this thing together. 
I'm so excited for the outcome...

I got it partly finished. I hope I can get out tomorrow. 
It's snowing pretty bad.
 I got a few things to do to finish it up but here it is so far...

Ok I managed to get out of the driveway (only took 4 tries)
 and went back to dollar deals and voila it's finished!

Bonus I made a kitchen journal... 
For all those times you're in the middle of cooking or cleaning
 and think of some nugget of genius or you are cooking and tweak you a recipe.
 By the time you finish what your doing and find a pen or something to write on it's gone.
 BAM! kitchen journal... 
Also if you do find a pen and a random receipt or phone bill to write on
 you'll lose it for sure and not realize till you need it soooo again
 BAM! kitchen journal...

I am also going to be making a personal recipe binder.
 I'll post about it when I start it... :0)

Oh Well Glad You Asked

Okay so I'm definitely playing a little catch up.
Which is kinda bad seeing as my blog is so new.
 I do however have a valid excuse or two for the delay in post.
I'll just run down a list of a few:
Snow
Ice
Busted Pipes
 Jole my 3yo puking
Buncha kids occupying PC
Migraine (2days)
Johnavun 7yo puking
okay anyway you get the point.
I've been busy...

Okay now begs the question 
"being so busy how has the diet or lifestyle change gone for ya?"
Oh well glad you asked because it has been 3 weeks and 4 days since anything 
unhealthy has passed these lips!!!
We have had some awesome 2pp brownies and 2 pp cake
not to mention all the awesome dinners we've had. 
I think my Johnavuns favorite thing I've made was a Kale Pasta thing.
Let me just say that child licked the bowl clean!!!

But I just wanted to let you know I did not stray nor did I have the desire to stray 
during my stressful week or so.
 I do however think that is a milestone. 
Stressed with life, did not stray=milestone in diet. 
Yep that's what were calling it a milestone!!!

Week 2...Bam!

Okay so today is week 2 healthyness!
What am I gonna do to celebrate.
I know it's just two weeks but we gotta celebrate the little things
to put the big things into perspective.
I don't know I just  made that up. It sounded real good in my head though!

I got it one of my faves is bocca chick'n alfredo. 
Let me find a healthy alternative way to make alfredo and it is on!!

I have figured out that a positive attitude breeds positive results.
It is so true. 
that is probably why all my other  attempts to "diet"
have failed miserably... 
You have to want it and i don't mean want it I mean REALLY want it.
This time I was really committed to making this work.
 No shortcuts, no excuses just do it and do it right.
I realized that my biggest fear was dying before I was done raising my boys. 
Well being 4ft9 and 200lbs is a good way to have that happen.
 Soooooo I am not only doing this for me but I am doing for my family too. 
That's a pretty good motivator :)

Skinny Joes

I love a good 'ole messy vegetarian sloppy joe.
But what red-blooded american doesn't.
Right?

Well everyone in this house does.
We also love the crock pot...
I got a beautiful new Sandra Lee
crockpot from my awesome husband for Christmas...
So how does crock pot, vegetarian sloppy joes sound?

Not just any oh vegetarian sloppy joes
were gonna make them healthy too!
Lets call them "vegetarian skinny joes"
Yep that's clever. That's what we are going with.

For the side we are going with a cucumber, sour cream salad.
Oh my tonights dinner is going to be sooooo good.
I am going to want it to go on forever.
How long can we make this dinner last

It's the simple things

Lazy night!
Yep tonights a lazy night...
Guess who doesn't feel like cooking tonight...
Give up? Yep this girl!
I get migraines. Quite often.
Sometimes I get drained a few days before one hits.
So I don't feel like doing alot of things.
Cooking, cleaning... Walking around lol...

So what's something easy (but good) that I can whip up...
It's gotta satisfy the whole crew...

I know grilled bocca chick'n salad!!!
Yeah that's the ticket
I'll just slice up and grill up some bocca chick'n.
Dice up some veggies for a scrumptious salad
oh yeah can't forget the "skinny dip" (0 point dressing)

Sounds like a good meal to me,
looks awesome...Have you ever heard of a beautiful
salad? Welp you have now, cuz it was a beautiful salad
Hmmm yep totally satisfied

Yums!

Well we had about 2 pounds of super firm tofu
so I needed to use it before it went bad.
I pondered and wondered and paced....
Eureka!!
Pulled "pork" sandwiches...
I believe my husband will approve! 
Dang my husband took the van to work...
Momma! I'ma call my momma...
Momma I need some diet root beer...
I'm making pulled "pork" sammiches...
Ok anyway I made some awesome pulled "pork"
sandwiches and skinny slaw (WW approved cole slaw)to put on them.
For the side I made ranch red potatoes
only a couple because they are like 3 points a piece.
Gots to make sure that my picky, vegetarian son eats... 
However as good as the main course was that's not the great part....
Drum roll please...
How's 2 point cake sound!!!!!!
Oh yeah like heaven...
What a great dinner!
What a great night....

Musing...

I had to go to Lexington today for my
 7 year olds doctors appointment
and the whole week I have stressed
 "how am I going to "be good" 
while traveling
~*~

It is just so easy to go through a drive thru 
and get a quickie, greasy, deep fried temptation.
and rather cheap too. Value menu this, dollar menu that, blah, blah, blah
~*~

So this morning still stressing as I was leaving the house
a traveler got in front of me from a gas and go. 
I glanced down and noticed from the probably 40 
bumper stickers 1. yes 1. This 1 bumper sticker among the plethora 
of other bumper stickers. It simply said
"Wherever you are, be all there"
~*~

Then it hit me. Traveling, at home, or running errands I have committed
to this new lifestyle. So, I'm all in. Before getting on the interstate I swooped 
into the local Aldi's grocery. I got $9.48 worth of easy to travel with fruits and veggies.
If one of us gets the munchies we can grab an apple, orange, cucumber or whatever.
That'll hold us over till we can get back home...

So you never know where your push, muse or inspiration
may come from but it will come... So never give up I mean after all

I come across a WW cookbook from January of last year.
 It is called "Best darn food ever".
 I want it soooo bad!!

Week 1 Is Done!!

Woo-Hoo I have finished week one...
Week 1 is done...
7 healthy days...
Sunday- Sunday getting right...
Okay you get the point! This is a major milestone :0)
I am very proud not only has it been a week but it has been a week without
any indiscretions or desires. No close calls or cravings :0)

Too bad I messed up my 1 week dinner :0(
The recipe called for dinner. I didn't have ginger.
Good 'ol Google said cinnamon could be used as a substitute
*pfffft* Google is a liar o.0

Lesson learned!!!
It was meh but we stomached it.
Tomorrow will be better!
I must prevail!!

Hot!!!

Ok sooo it's January
and all the air conditioners have naturally been taken outta the windows.
Yet it is 64• on this fine Ky. evening


Therefore choosing to make homemade tofu noodle soup
was probably not the best idea I have ever had.
Ok I did it anyway
and despite the unseasonable weather
dinner was completely devoured.

I was really happy that
the kids (my 3 and 3 extra) especially
loved the skinny dip I made to
go with the salad.
Seriously they were eating just it with a spoon.
I swear. I am not making that up!

Therefore dinner was filled with
awesome prayers,
big laughs, fun conversations
and good food :o)

Hungry Hungry Hippo

I feel like all I have done
today is eat....
Eat and watch Private Practice!
To be perfectly honest I probably
have ate all day...
However I have ate nothing but veggies
Cucumbers, cauliflower and spring beans
Oh My!!!
That and my "skinny dip"
That's my homemade healthy
WW friendly and picky kid approved
veggie dip...Yummmm
It's to-die-for :)

to my fave show all day...
Needless to say I have
had a "girly" day :0)

I thought "You know
I probably shoulda
weighed myself when starting

Homemade Jambalaya

Okay for the first time ever
I made completely
homemade Jambalaya

Of course to make
it weight watchers approved
I did brown rice instead of white
and tofu instead of beef

YUMMY!!

It was soooo good
I am proud of my first
ever completely homemade
jambalaya! :o)
Now something you may not know

we are pescetarian.
Which means the only meat we eat is seafood.
This simply means whenever I try something new
I have to substitute all them meats or just leave them out if it’s possible.
Over all homemade jambalaya night
= success

Pork Lo Mein Noodles

Yummy! I love Lo Mein, and now it loves me...
Course I leave out the pork and use a meat substitute

Only 8 points-plus per serving
Serves 4
About 1 1/4 cups per serving


8 oz uncooked lean pork tenderloin, cut in 1/4-inch-wide strips
3 Tbsp low-sodium soy sauce, divided 1 Tbsp minced garlic
2 Tbsp ginger root, fresh, minced
8 oz uncooked linguini
1/8 tsp table salt, or to taste (for cooking pasta)
1/2 cup(s) uncooked carrot(s), thinly sliced
1 tsp canola oil
4 oz button mushrooms, or shiitake mushroom caps, sliced
1/2 cup(s) reduced-sodium chicken broth 1 tsp toasted sesame oil
1/3 cup(s) uncooked scallion(s), sliced



In a medium bowl, toss pork with 2 tablespoons of soy sauce, garlic and ginger; let stand 20 minutes.



Meanwhile, cook linguini in a large pot of lightly salted water according to package direction; add carrots to pot 5 minutes before linguini will be done. Drain; set aside.



Heat canola oil in a large nonstick skillet over medium-high heat; add mushrooms and pork. Increase heat to high; stir-fry until mushrooms release their liquid and become lightly browned, and pork is cooked through, about 6 minutes.



Add drained linguini and carrots, broth, remaining tablespoon of soy sauce and sesame oil to skillet; toss over low heat until combined. Remove from heat and stir in scallions; serve immediately.

Last Nights Noodles

Last night we enjoyed some awesome
and weight watchers approved
"Pork" Lo Mein.
It was pretty easy to put together
and soooo yummy to eat.
