Gotta stop this!

Stopping running is not hard... 
Starting back on the other hand!
Going back to running after a break 
is like when you pause a video game to go pee 
and when you come back 
you forget how intense and chaotic everything was when you paused it 
and the second you unpause it 
all your enemies collectively punch you in the face...

Fruit Leather!!


I made peach fruit leather tonight


HOMEMADE FRUIT LEATHER



Homemade fruit leather is so easy to make and is a great healthy snack! I used peaches for this recipe, but feel free to use your favorite fruit. Strawberries and raspberries are my other favorite fruits to use.
yield: 1 PAN FRUIT LEATHER-ABOUT 10 FRUIT ROLL-UPS

INGREDIENTS:

3 cups ripe chopped fruit (I used peaches this time)
Sweetener, to taste (I use agave or honey. Granulated sugar is fine too)

DIRECTIONS:

1. Preheat oven to 150 degrees F or the lowest temperature your oven will go. Line a 11 x 17 baking sheet with a Silpat baking mat. Set aside.
2. Puree the peaches and sweetener of your choice in a blender or food processor until smooth. Pour fruit mixture onto prepared baking sheet and spread to about a 1/8″ thick. I always pound the baking sheet on the counter a few times to make sure the fruit mixture is evenly distributed.
3. Place baking sheet in the oven and bake for 6-8 hours, until pan is set and the center is not tacky. Remove from oven and let cool to room temperature. Gently peel off the fruit leather from the Silpat. Cut into squares or strips using a pizza cutter, knife, or scissors. If you want to make fruit roll-ups, roll the strips in parchment paper. Store in an air-tight container.
Note-if you don't have a Silpat baking mat, you can line the baking sheet with plastic wrap or parchment paper. The plastic wrap will not melt in the oven because the temperature is so low. I prefer to use a Silpat though. Get creative and use your favorite fruits, you can also mix fruits! The fruit leather will keep up to a month in an air-tight container.

Why I Share My Transformations

I  love to share my before/after shots 
because no matter what that person will always be a part of who I was!



I hear people that are afraid to show before pictures. It's like they pretend "before" never existed. Or they say things like "cow" "pig" "disgusting" "embarassing"etc...

Don't be ashamed of who you were!
Unless you were a total shut in like it or not people saw you that way anyway...



It just strikes me as incredibly sad that people would put thereself down that way. 
The world is ready to put you down enough as it is, so why be so hard on yourself?

 I will never hate the person I used to be, 
because she is the woman that had the courage to look in the mirror and say "No more"
she had the courage to start and when the going got tough she had the courage to soldier on...

I still have a long way to go on my journey, but thanks to the "before" version of me who had the guts to take that first step, I have lost 100 pounds.

I am not ashamed of who I was. 
I am ashamed I let it go that far.



When I look at those pictures of the old me, it brings tears to my eyes. Tears of love and gratitude! I wish I could go back in time and give myself a hug and say "Thank you for having the courage and strength to get started. Thank you for not giving up even though it was super hard. Thank you for stealing your life back!" 



Also you never know who is struggling in silence and you could inspire them.
Be proud of who you are but also be proud of who you were!
Share your befores just as proudly as you share your afters!!!
