The Last (fish) Supper

Okay so up till today we were pescetarian (vegetarians that ate fish) 
Nope not anymore!!!!
I so a terrible, terrible documentary about how fish were caught and processed.
 Mind blowing stuff!!!
I knew about cows, pigs and chicken and how they were treated and processed 
but never heard or saw anything about the fish :(
 I guess I should have known it was no better but lesson learned

Got myself a Weight Watchers ActiveLink!!! You know what that means? More points!!! I earn extra points by being active! I don't have to do any math or configuring... It does it for me!!! You just clip it on and go, at the end of the day you plug it in to your computer and bam it knows what you've done activity wise... :0) I'm excited! I mean after all I am so active might as well get something out of it without the guess work!!!

My Supportive Husband...


My husband is so supportive of everything I do.
He has been totally on board with our healthy lifestyle (bonus loss of 32 pounds)

We do all our grocery shopping on Monday.
When we get home Jeremy takes all the cereal, snacks and anything that can be measured into serving and put into a baggy.

He then adds up their point value and writes it on the sandwich baggy and puts it away.
That way it is ready when we are busy with homeschool, errands or running out the door to go do our workout. 

Just an idea that may work for you :0)

Signed Up...No Turning Back


Well we are registered and paid for the 5K. 
It looks like so much fun!
It's called "color in motion 5K"
While you are running people are throwing paint all over you!!!
How fun does that sound?
Listen, It maybe a stretch but we are pumped and training our booties off...
Literally!!!! *snickers*
There are 7 of us going so we registered as a team... Wanna know our team name?

Yep because I said we are crazy cakes for doing this so soon!!!

Philly Cheese "steak" Stuffed Bellpeppers...Just thought I'd share

INGREDIENTS
8 oz. Thinly Sliced Seitan
8 Slices Provolone Cheese
2 Large Green Bell Peppers
1 Medium Sweet Onion
6 oz. Baby Bella Mushrooms
2 Tbs. Butter
2 Tbs. Olive Oil
1 Tbs. Garlic – Minced
Salt and Pepper – to taste
(2 Tbs. Peace and Love)

DIRECTIONS
Slice peppers in half lengthwise, remove ribs and seeds.

Slice onions and mushrooms.  Saute over medium heat with butter, olive oil, minced garlic and a little salt and pepper.  Saute until onions and mushroom are nice and caramelized.  About 25-30 minutes.

Preheat oven to 400*

Slice seitan into thin strips and add to the onion/mushroom mixture.  Allow to cook 5-10 minutes

Line the inside of each pepper with a slice of provolone cheese. 

Fill each pepper with ""meat" mixture until they are nearly overflowing.

Top each pepper with another slice of provolone cheese.

Bake for 15-20 minutes until the cheese on top is golden brown. 

Serve and Enjoy!!

Makes 4 servings –  6 net carbs per serving

Ahead of myself...

Ok so I am feeling so good about my almost 30 pound loss that I may have gotten a little over zealous...
 but what's done is done. Now I'm invested...
Well I signed up for a 5K run in 8 weeks. 
Which means I had to buy running shoes and start training. 
Couch to 5K it is...
 I am however pumped for it.
 I figure even if I cross the finish line last, I crossed the finish line!! 
And if I don't send all donations and flowers to Jeremy :0)

Why am I WWering...

The inner monologue was a killer... Just kidding.

Seriously though I'm doing it for the health of it.
I woke up one morning and realized 
(I mean I always knew but it donned on me)
I don't want to die before I'm done raising my kids.
**The swimsuit is just a fringe benefit** 

I have been at it for 8 weeks and my whole entire life has changed.
 I can bend over and tie my shoes without straining. I wake up earlier and easier.
 I am more confident and happier all the way around. :0)

I hope anyone else that decides to WW or carb count or calorie count or whatever
has success and can feel what I feel

This is probably the last weekly update.
 I figure after 8 weeks 
we know I'm good to go on the sticking to it thing. 
Maybe I will switch to monthly updates.

Any how guess what.................... Give up................. Well without any further ado.............

Celebrating 20
